Tomato & Mozzarella Caprese de Old Chicago 

Welp guys and gals here it is!

My first unsatisfied blog. For those of you who 
know me, you will be surprised to hear this is my first. Now that I am on the road I have the time to get things going. Once I get a place, I will get settled and can start my YouTube series! I am currently in Colorado and the other night we went out to eat at the Old Chicago in Loveland. This was my first time eating here and everything looked great. Unfortunately I was not allll that hungry so I decided to order mozzarella and tomatoes with basil and chicken. Now, you can not really go wrong with this dish. Slice tomatoes, mozzarella, and grill some chicken.

Aside from the bent mozzarella everything looks okay here. This happens to be the 5th time since getting ready to leave florida that someone has served me the top of a red tomato. You know, the part where it is still white and green up into the skin being red! Most of the time it has been on a burger or another dish were it is hidden. When you have a tomato as the main ingredient you best make sure your serving the juicy middle slices. I Mean, they should have done that for presentation alone. Presentation Ill give them a B. It was a nice attempt.. But it is to oily, the balsamic was sloppy, and they cleverly hide every tomato. The olives were a nice touch, and I love basil.Basically this could have been such a simple amazing dish. Maybe if they didn’t false advisories I would not have felt the need to write.

You are reading correctly, Thick slices of mozzarella and ripe tomatoes. Now when you look at that picture, do you see as the menu describes?  You can see just how thick the mozzarella is. Even Taco Bell makes their taco look just like the advertisement. Speaking of taco bell, if you have not tried Mc Donald’s new Artesian chicken sandwich, You have to! It puts this chicken to shame. Yes I said it. I brought up Mc Donald’s in a Old Chicago review, so you know something wrong. Overall I might eat there again. Next time maybe I would get a hero or pizza. Being a cook, I am an understanding customer. My boyfriend liked his calzone and the cheese cake was wonderful !!! Puertorican blood means I crave sweets night and day. It’s been awhile since I had a good cheese cake and i have  been waiting for one in particular.  

  
 Sooo better dressed then my last meal! I am glad I stuck through and got it so I have at least one good thing to say. The Strawberries were fresh and the gram cracker was just right! Since December I have been craving a specific strawberry cheese cake. After 3 let me down I stoped my search. I am confident to say this is it! 

 

Do not let my food photography skills get in the way of your judgment. I fixed this up a bit just to get a decent photo. I am actually sitting here laughing with myself looking at the chicken and remember it’s flavorless taste. I remember seeing this on a show. I cannot remember the name, if someone knows what I am talking about comment below! I feel like it might be Zach and Cody. A food critic was coming in the restaurant and everyone was suppose to look out for him. They thought it was one guy ordering every big steak off the menu; so they were treating him very highly. At the end it turned out; the guy they were ignoring with the smallest order, was the real critic. I realized critics really do go in for the smallest thing.

ChefboyRhealy On The Beach 

  
So everyone ! Today is the day! I quit my job today and we decided to drive south to the beaches one las time before our big trip. For those who do not know, we are heading out west. I am asking you please comment below your favorite places around the U.S. We want to go there too and check it out! We will be grilling and chefboying it up along this drive. Tell me about your state and home food. I want to make it all. Expect me to go Mia for a little while but I swear I’ll make as many posts as possible ! Stay tuned for our exciting journey !

We are just north of Jupiter beach at the bath tube reef. This place is beautiful and as I type, we are parked in the middle of a storm ! I am going to miss the tropical weather for sure. Everyone so far has been very friendly and welcoming. The talk of the town was on the thousands of sea hares that Wash to the shore. This happens only a few times over the year. They are not harmful, so you can still go in the water. Once you pass the break it clears up. We swam and touched them like sting rays. For food we grilled rice , beans , and beef our first night. The next morning called for eggs and toast. Then we finished off the night with hot dogs and French fries.

Pineapple Pasta !! 

  
Ingredients 
🔹1/2 box of pasta

🔹3 cups of water

🔹TBS of vegetable paste

🔹 1 cup pineapple Juice 

🔹 Pepper, chili pepper, salt, Parmesan cheese 

🔹Squirt of lemon juice 

🔹3 pineapples 
Instructions 
1. Bring 3 cups of water and vegetable paste to a boil 

2. Break pasta and add it to the pot.

3. Once the water starts reducing, add the pineapple juice and seasoning. 

4. Let it cook for a good two minutes

5. The pasta should be soft, and the liquid should be thin, like a sauce.

6. A Squirt of lemon juice will season it up 

7. Plate

8. Season 

9. Serve 

Oh So Sweet Mofongo

  

We are always going to the local food truck for some mofongo, and lately it has been a lot on our bellys and wallet; so we decided to dine in. This was my first time making mofongo and I was a little nervous. It takes for ever to hand mince 6 garlic gloves so I’d suggest getting some premade or if u have a blender or bullet, it’s great for time. My boyfriends only problem with the food truck is it is always dry. The cup of liquid in the mofongo was the perfect touch. Being that I used sweet plantains instead of green the texture was different. At first it threw me off, but after a few critics telling me how good it was i reconsidered. I guess we really are our worst critic. Go try some mofongo because it’s amazing ! 

Ingredients 

🔹 2 sweet plantains 

🔹 2 cup of olive oil 

🔹 6 fresh garlic cloves minced 

🔹 2 TBS of olive oil 

🔹 4 cups stock/liquid 

🔹 S&P TT 

🔹 Two oz of white rice

🔹1 can organic lentil beans 

🔹 seasoning 

🔹 teriyaki pineapple sausage 

🔹 1/2 onion diced 

   
 

  
Instustions 

  1. Mince 6 cloves of garlic , dice the onion and sausage , peel and slice plantains about 1 inch. 
  2. Place the garlic in a large bowl and pour in 2 TBS of oil 
  3. Bring to a boil , 4 cups of water and seasoning and cook the rice for 10 mins. 
  4. While the water is heating up, Heat 2 cups of olive oil in a pan.
  5. Place half of the plantains in the pan at a time and cook for 7 minutes on high, they should be about golden brown. Once finished place on a paper towel to soak access oil. 
  6. Drain rice and keep 1 cup of liquid 
  7. Pour the can of beans in the pot the rice was in and cook for 3-5 minutes on medium. 
  8. Place the sausage and onions in the pan and Sauté until the onions are transparent.
  9. Put the cooked plantains in the bowl with the garlic and mash together 
  10. Drain the beans and place rice back in the pot an mix together. Add seasoning 
  11. Add 1 cup of liquid to the plantains for moister. 
  12. Plate the rice and shape the mofongo in a ball around the sausage and onions.
  13. You can add Hot sauce, celontro, etc.

So you all are learning about me that I am not a tech person. With each day that passes I am learning new things about the Internet and social media.I am learning how to look around WordPress as well. I would love nothing more then feed back to know that someone is reading this 🙂 This being said, I am sorry I disappear for a little. I have brought a story for you though ! 
Last weekend, my boyfriend and I drove out to Clear Water. I currently live in Orlando so that is about a two hour drive west. This is our second time being there and we love finding little places to eat. Cheap prices just happens to be a big bonus! There are two reasons I love ClearWater, Florida :
1. Seriously, super cheap. 
Your basic burger and fries are going to be over priced on the beach; Nothing has changed there. Although, Just a short walk off the shore and pizza is going for $1 a slice. 
2. It is a closer version of key west. 
Key west is about an 8 hour drive from orlando. Although we have done it, it sure is not easy while working six days a week. Clear water is two hours as I stated earlier. That makes it easy to go Saturday after work at 5pm and be back Monday by 9am. The water is just as clear as key west, and the gulf is the perfect sea. It has calm waves and warm water. 

  

Along our morning walk we came across a small restaurant called Kevin’s Kitchen. My fathers name was Kevin so by blood I was drawn in. The owner was very friendly and the service was great! Actually the girl working the counter was the same girl from the pizza shop during our last visit. While my boyfriend stuck with basic breakfast food; I of course ventured out and got a burger. The french fries are what won me. I am a fry addict! then again, who isn’t ?
  

Everything was great; My only critic would be that the cheese could have been melted. I am a critic for sure to, so that is pretty good 👌 The food was so good even the birds from outside knew about it. The entire time we were eating two birds were walking back and forth outside the front door. They were not shy to peak in either. So me, being the person I am, grabbed some lettuce and walked outside. Im sure Kevin would not like people feeding them; since that only leads them to comeback. They were just so cute ! So I had to do it 🙂 the bird walked right up to me and took the lettuce out of my hand. Let’s face it, people had to of done it before with how comfortable they were. 
  

Like aways, we had an amazing time during our trip and we look forward to going back soon. 🙂

Rice and Pulled Pork Burito 

  With a great party comes great food, with even greater left overs.  Congratulations to my dear friend Jessica for graduating high school ! Her aunt Lou cooks bomb ass meals and blesses me every time I walk through the door. 

Ingredients 

• Rice and beans 

•olives 

• capers 

•pulled pork

• 1 can of organic corn

• 1/2 onion diced 

• 1/4 head of lettuce sliced 

• 1 tomatoe diced 

• 4 tortellias 

• 2 oz olive oil 

• 1 oz butter 

• salsa 

Instructions 

  1. Wash tomato and lettuce 
  2. Heat 1/2 the oil in a pan
  3. Re fry pulled pork
  4. Open can of corn and pour carefully into a pot on medium heat
  5. Splash water on the rice for best results and add it to the pan
  6. Add your butter and let melt over the rice 
  7. Stir occasionally 
  8. Once fully heated, remove from pan
  9. Add the rest of the oil to the pan and heat up the onions until translucent 
  10. Dice the tomato and slice the lettuce 
  11. Mix the meat back into the pan
  12. Drain corn and add it to the pan
  13. Stir together 
  14. Plate and serve

I found some taco shells and my  Burito turned into a salad.

Vegetable Soup 

#Ingredients 

• 1 oz of bow tie pasta 

• 2 cups of water 

• 1 can organic vegetables 

• 3 Frozen Tostones 

• T veg. Stock paste 

• S&P, oregano, hot chili powder, garlic 
#Instructions 

1. Turn deep fryer to 375 degrees 

2. Bring water and veggie stock to a boil

3. Add Pasta to the pot of boiling water and lower the temp.

4. Drain the can of veggies and add to the pasta once tender 

5. Season 

6. Carefully put the Tostones in the deep fryer.

Check in 3 mins, they will float when ready. 

7. Plate and serve
  

Chickenparm over Capellini  

Chicken Parm over capellini 

Serving size – 2 

Ingredients :

| 4 oz chicken | 1/2 box of pasta | 12 oz sauce | mozzarella cheese | 2 eggs | 2 cups of fine bread crumbs | 1 cup of crunchy bread crumbs 

Instructions: 

1. Fill a pot with water and bring to a boil

2. Preheat the deep fryer and oven to 350 degrees. 

If you are not using a deep fryer and just a frying pan, hold off until your chicken is ready. 

3. Wash chicken and cut into two pieces

4. In a bowl mix eggs together

5. Pour on a large plate the 3 cups of bread crumbs and any additional spices ( I use a personal secret spice here) 

6. the water should be boiling by now, so add your pasta and reduce heat. 

7. Coat your chicken in the egg and then bread crumbs. ( repeat for each piece) 

8. Place chicken on a paper towel to allow extra bread crumbs to fall. 

You want to just coat the chicken. 

9. Drain the pasta when it is cooked to your preference. I like well cooked pasta, while others like aldente. 

10. Carefully place your chicken in the deep fryer. ( if using a pan, now turn the heat on and preheat the oil) 

11. In the same pot the pasta was once in now heat up the sauce. 

12. Make sure chicken is cooked to an internal temperate on 165 degrees before taking out of the pan. 

13. Once the chicken is cooked get a pan ready and coat with a little sauce. Place the chicken in the sauce and cover the chicken in more sauce. Add cheese and place in the oven.  Cook until cheese in melted. 

14. Return pasta to the sauce and mix throughly. 

15. Get a plate ready, and serve.

Black Bean Tostones Burger 

Okay so I have been telling you guys about my obsession with tostones; and here it finally is. This was my first time making black bean burgers. So I figured why now celebrate with a little tostone bun.

Ingredients :  Serves 4 

Burger

  • 1 can organic black beans 
  • Pinch of chili powder 
  • 1/2 onion 
  • 3 garlic cloves 
  • 1/2 cup bread crumbs
  • 1 egg
  • Hot sauce 

Toppings

  • 1/2 onion 
  • 1/2 tomato 
  • 4 tostones 
  • 2 potatoes 
  1. Preheat oven to 375 degrees and start mashing black beans until it forms a paste. 
  2. Finely Mince galic and cut onion into a small dice. (A food processor is recommended though not necessary. 

  1.  In a separate bowl , mix your egg, chili powder, and hot sauce 
  2. Combine galic and onions in with the beans and mix together.
  3. Then add your egg mixture 
  4. Once that is all smooth, add the bread crumbs and start shaping.

  1. cook for 8 minutes on each side 

  1. prepare your toppings 

  1. Cut potatoes  
  2. Deep fry on 375 degrees until golden brown. 

  1. Top with grated cheese and seasoned salt
