Vegetable Soup 

#Ingredients 

• 1 oz of bow tie pasta 

• 2 cups of water 

• 1 can organic vegetables 

• 3 Frozen Tostones 

• T veg. Stock paste 

• S&P, oregano, hot chili powder, garlic 
#Instructions 

1. Turn deep fryer to 375 degrees 

2. Bring water and veggie stock to a boil

3. Add Pasta to the pot of boiling water and lower the temp.

4. Drain the can of veggies and add to the pasta once tender 

5. Season 

6. Carefully put the Tostones in the deep fryer.

Check in 3 mins, they will float when ready. 

7. Plate and serve
  

Chickenparm over Capellini  

Chicken Parm over capellini 

Serving size – 2 

Ingredients :

| 4 oz chicken | 1/2 box of pasta | 12 oz sauce | mozzarella cheese | 2 eggs | 2 cups of fine bread crumbs | 1 cup of crunchy bread crumbs 

Instructions: 

1. Fill a pot with water and bring to a boil

2. Preheat the deep fryer and oven to 350 degrees. 

If you are not using a deep fryer and just a frying pan, hold off until your chicken is ready. 

3. Wash chicken and cut into two pieces

4. In a bowl mix eggs together

5. Pour on a large plate the 3 cups of bread crumbs and any additional spices ( I use a personal secret spice here) 

6. the water should be boiling by now, so add your pasta and reduce heat. 

7. Coat your chicken in the egg and then bread crumbs. ( repeat for each piece) 

8. Place chicken on a paper towel to allow extra bread crumbs to fall. 

You want to just coat the chicken. 

9. Drain the pasta when it is cooked to your preference. I like well cooked pasta, while others like aldente. 

10. Carefully place your chicken in the deep fryer. ( if using a pan, now turn the heat on and preheat the oil) 

11. In the same pot the pasta was once in now heat up the sauce. 

12. Make sure chicken is cooked to an internal temperate on 165 degrees before taking out of the pan. 

13. Once the chicken is cooked get a pan ready and coat with a little sauce. Place the chicken in the sauce and cover the chicken in more sauce. Add cheese and place in the oven.  Cook until cheese in melted. 

14. Return pasta to the sauce and mix throughly. 

15. Get a plate ready, and serve.

Black Bean Tostones Burger 

Okay so I have been telling you guys about my obsession with tostones; and here it finally is. This was my first time making black bean burgers. So I figured why now celebrate with a little tostone bun.

Ingredients :  Serves 4 

Burger

  • 1 can organic black beans 
  • Pinch of chili powder 
  • 1/2 onion 
  • 3 garlic cloves 
  • 1/2 cup bread crumbs
  • 1 egg
  • Hot sauce 

Toppings

  • 1/2 onion 
  • 1/2 tomato 
  • 4 tostones 
  • 2 potatoes 
  1. Preheat oven to 375 degrees and start mashing black beans until it forms a paste. 
  2. Finely Mince galic and cut onion into a small dice. (A food processor is recommended though not necessary. 

  1.  In a separate bowl , mix your egg, chili powder, and hot sauce 
  2. Combine galic and onions in with the beans and mix together.
  3. Then add your egg mixture 
  4. Once that is all smooth, add the bread crumbs and start shaping.

  1. cook for 8 minutes on each side 

  1. prepare your toppings 

  1. Cut potatoes  
  2. Deep fry on 375 degrees until golden brown. 

  1. Top with grated cheese and seasoned salt

Asian Chicken Salad

Find me on Instagram #chefboyrhealy. You will find that I am obsessed with not only tostones, but Asian sesame dressing as well. Sometimes I even put the combination together ! My obsessed started the first time I had this salad from friendlys. I now live in Florida were friendlys is not around. So the chef in me decided to start making my own.

Ingredients 

  • Handful of Organic spinach 
  • 1 piece of chicken 
  • 4 grated carrots 
  • 1/2 can of mandarin oranges 
  •  Chow mein noodles 
  • Sliced almonds 
  • Asian sesame dressing


Instructions

  1. Wash your lettus. Even if your bag says “prewashed”, because 1 it does not hurt and 2 you have no idea ! Who “washed it” or where they have been. Always better to be safer then sorry when it comes to your body.
  2. The chicken can be cooked to your preference , grilled, sauted, baked, or fried. I usually saute or bake my chicken.
  3. Have on your cutting board, carrots almonds and COOKED chicken. Rawr chicken should never be used on the same cutting board as produce. 
  4. Slice almonds, carrots, and cut chicken as desired.  
  5. Place your lettus on a plate. 
  6. Add your carrots, chow mean noodles, chicken, and oranges.
  7. I like to leave almonds last, for a finishing touch. 
  8. Finish off with the amazing Asian sesame dressing and your plate will taste as amazing as it looks.

Chicken scampi over capellini 

 Chicken scampi is one of my favorite dishes. Today I kept it original, but I usually will put in roasted peppers, and I believe that is the perfect touch. You will notice in my ingredients that I try to stay completely gmo free. Believe me; I’m a broke college student, but the extra dollar or two is worth it for your body, I promise. 



Chicken

  • 1 cup Almond milk
  • 1 cup Besquick pancake flour
  • Pinch of Garlic powder 
  • 4 oz Chicken 

Scampi sauce 

  • 2 oz Butter
  • 1 oz Vegetable oil 
  • 4 pieces of fresh Garlic 
  • Half an Onion
  • 1 oz White wine 
  • Fresh Lemon juice 
  • 1 oz Roux ( equal part butter and flour ) 
  •  2 cups Chicken stock
  • Half a box of pasta 
  • Tt s&pStart by boiling water in a pot. This is for your capellini. You want to slice your garlic in this dish, vs. it being minced. You will see why in the finished product. Dice the onions and slice your lemons. I used half the lemon to squeeze in the chicken and sauce. Then I used the sliced lemons as an extra touch.  

Replacing eggs, I used a cup of silk almond milk to wet the chicken. I always use silk almond milk for its great taste, and true nutrition. I do not believe that gmos should be in our body, and this brand promises me they will not be. It is delicious for smoothies aswell. With a pinch of garlic in the bisquick pastry flour, I coat the chicken. Make sure you shake the remaining flour off. To much flour can lower the temperature of your oil. Chicken should always be cooked to an interior temperature of 165 degrees. Turn the chicken when it is half way cooked and Squeeze your lemon on it.  At this point your pasta should be cooking. 

Melt butter and light oil in a pan. Place the garlic in carefully about a minute before the onions. You want to cook the onions until they are transparent. Putting the garlic in first will prevent the awkward; my garlic is still Rawr and my onions are burnt stage. The important thing is making sure you do not  burn the butter. From there i deglazed the pan with white wine and added my chicken stock. Lower your flame and let it simmer. Add roux to thinken the sauce, and bring chicken back to pan. 

On the side you want to strain the pasta and toss it in the sauce. A little salt, and little pepper, and you are ready to serve. Add another lemon on top for a finishing look.
